Production Process

Our manufacturing plant measures 18,000 square meters.

Following a thorough quality-control process and equipped with the machinery of the highest technology, we guarantee the best Avocado Pulp and Guacamoles in the world. 

   

Step 1: Harvest

We select the best avocados by hand to make sure all of them are at the exact same ripeness. 


Step 2: Reception 

The avocados are received and every single one of them is thoroughly evaluated.


Step 3: Wash and Rinse

The selected avocados are carefully washed.


Step 4: Maturation 

The selected avocados are placed in maturation chambers to regulate to the ideal ripening phase.


Step 5: Cut, Boneless, and Pulped

When the avocados are perfectly ripe, we cut them in half, the bone of the halves is discarded, and we carefully extract the pulp from the peel. 


Step 6: Preparation

The clean avocado halves are converted into pulp and, when producing guacamole, the ingredients are added and mixed with the pulp. 


Step 7: Vacuum Packing (step 1 to extend shelf-life)

The packing machine removes most of the oxygen, making it an excellent barrier from the elements by preventing chemical reactions that cause food to spoil. Holds in the moisture, juices, and flavor of 

the Avocado. It keeps the nutritional content of the avocado intact and keeps it from oxidizing.


Step 8: High-Pressure Processing (step 2 to extend shelf-life)

HPP machine uses intense pressure to destroy microorganisms within the product. The shelf life is greatly extended by deactivating microorganisms that naturally spoil food. This process achieves the same level of food safety that heat pasteurization does, but without damaging the nutrients.


Step 9: Industrial Freezing (step 3 to extend shelf-life)

By freezing the product, we essentially hit “pause” at the point of harvest on the natural aging process of the avocado, locking in vitamins and nutrients. Frozen avocado pulps and guacamoles will not be vulnerable to unwanted microorganisms, and the air-tight environment will prevent the crystals that cause freezer burn from forming inside.


Step 10: Labeling and palletizing 

We match the product to their SKU label, box them and prepare the pallets following our clients' requirements.
