1 pack of Mexican HarvBest® Avocado Pulp (227g pack)
1 cup fresh basil leaves
1/2 cup grated Parmesan cheese
1/4 cup pine nuts (or any nuts of your choice)
2-3 cloves garlic
Juice of 1 lemon
1/4 cup olive oil
Salt and pepper to taste
Cooked pasta of your choice
Instructions:
In a food processor, combine the Avocado Pulp, basil leaves, grated Parmesan cheese, pine nuts, garlic cloves, lemon juice, olive oil, salt, and pepper.
Blend until the mixture is smooth and creamy.
Taste and adjust the seasoning if needed.
Toss the Avocado Pesto sauce with your cooked pasta.
Garnish with grated Parmesan cheese and fresh basil leaves.
