Avocado Ice Cream

Ingredients:

  • 1 pack of Mexican HarvBest® Avocado Pulp (227g pack)
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional mix-ins: chocolate chips, chopped nuts, fruit pieces

Instructions:

  1. Place the Avocado Pulp in a blender and add sweetened condensed milk, heavy cream, vanilla extract, and salt.
  2. Blend until the mixture is smooth and well combined.
  3. Taste the mixture and adjust sweetness if needed.
  4. If desired, stir in any mix-ins like chocolate chips, chopped nuts, or fruit pieces.
  5. Pour the mixture into a freezer container and smooth the top.
  6. Cover the container with plastic wrap, pressing it directly onto the surface of the ice cream to prevent ice crystals from forming. 
  7. Freeze the mixture for at least 4 hours.
  8. When ready to serve, let the ice cream sit at room temperature for a few minutes to make scooping easier.
