Avocado Chocolate Soufflés

Ingredients:

  • 1 pack of Mexican HarvBest® Avocado Pulp (227g pack)
  • 1/2 cup dark chocolate chips or chopped dark chocolate
  • 1/4 cup cocoa powder
  • 1/4 cup honey or sweetener of your choice
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: powdered sugar or whipped cream for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease individual ramekins.
  2. Melt the dark chocolate in a microwave and allow it to cool.
  3. Blend the Avocado Pulp, melted chocolate, cocoa powder, honey, egg yolks, vanilla extract, and salt until well combined.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the beaten egg whites into the avocado-chocolate mixture in three parts, taking care not to deflate the mixture.
  6. Spoon the soufflé mixture into the prepared ramekins.
  7. Bake in the preheated oven for about 15-20 minutes or until the soufflés are puffed and set.
  8. Remove from the oven and let them cool slightly.
  9. Dust with powdered sugar or add a dollop of whipped cream for garnish.
